Fall Seasonings.... pumpkin-cranberry pecan muffins with candied orange

I made these delicious muffins from real pumpkin instead of canned pumpkin! It was a HUGE success and as a result, I will never use canned pumpkin again! They were moist and delicious and each bite was wonderful experience in gustation.

"Black and White" theme

I made these for a Black & White Party this weekend. It's hard to get a black frosting- it turns out gray rather than black and doesn't really look to appetizing. I used a milk chocolate ganache topping instead of a dark chocolate one. They turned out really pretty....

Strawberry Shortcake Cupcakes!

This was a total improve for me since I had a whole bunch of vanilla cupcakes left over. It was from a recipe I found for "moist" vanilla cake, but the density was more like a shortcake biscuit rather than a "cupcake. Didn't want them to go to waste so I cut the cupcakes in halves, used some sliced strawberries soaked in honey, and whipped up some whip cream. Piped some white chocolate gananche frosting on top- et Voilà, strawberry shortcake cupcakes.

Tiramisu as a cupcake!

One day, as I was thumbing through the pages of a lovely cucpake book, I found a recipe for a tiramisu cupake. I never thought of the idea of tiramisu as a cupcake but the idea SURE sounded good to me, as I really LOVE tiramisu! It looked beautiful and lucious, with it's multi-layers of cream! Yum, yum!! Soooo, I knew that I would have to try it out! I sure wasn't sorry after tasting this delicious cupcake!

Easter Cupcakes.....

These cute cupcakes come just in time for Easter. Well, I know Easter is a few weeks off, but I'm getting ready early. I made these to share with local merchants and others in town, to give them a sample of my baking! I laid Jelly Belly's, as well as an assortment of Easter chocolates from Jeff de Bruges on top of the frosting for decoration. Inside this moist chocolate cake was chocolate whipped cream! YUMMM!!!

Carrot cake cupcakes by Garance!

These beautiful and delicious cupcakes were made today by Garance during my very first, "Cupcake Fun" baking class! These cupcakes turned out very moist and tasty! We made a citrus icing for them rather than a cream cheese frosting. I think they turned out wonderfully! Great job, Garance! I had a nice time meeting you and your mom and aunt.

Close-up portaits

Trying out new recipes for the spring!

It was fun! Over the past few weeks, I've been baking up cupcakes like crazy! Here are some of the ones I made. These were a white cake- most and dense, with zemon zest and an ever-so light lemony taste. Whipped white chocolate ganache tops these lovelies and adds are really rich taste to compliment the cake. YUM!!!

Valentine's Day Cupcakes

These were a variation of the pistachio cupcakes I made the other day. These were made with almond powder. I melted some milk chocolate and spread it over the top of the cupcakes. It was a delicious combination.

Wedding cupcakes...

It's a first for me, but I managed to pull off 90 cupcakes for Jess and Nico's wedding party this weekend... Jess made the ganache frosting (yay). I arrived at the hostess' house a few hours before the party and frosted the cupcakes. I elicited the help of two girls at the party (around 12/13 years' old) to make the cream cheese frosting.

At first they were a little shy and unsure- the recipe was in English and with American measuring cups/spoons). But, after I explained the directions to them... they went at it "full steam ahead" and the frosting was a great success!!!! Plus, we had fun! They really wanted to taste the carrot cake cupcakes so I let them split one and it seemed like they had found Heaven!! They were sooo thrilled with the success of their endeavor that I told them to make sure they told everyone that it was them who made the delicious frosting!!!

As it turned out - the carrot cake cupcakes turned out to be a GRAND SUCCESS with everyone!!!

P.S. - If you take a good look at the cupcake stand, it was Jess' dad who constructed it from scratch... It looked professional!!! Also, the "Magic 8 Ball" was a game - Upon taking a cupcake, you had to ask the Magic 8 Ball a question and then flip up the little paper magic 8 ball on the toothpick to find the aswer.. It was very cute and very original as an idea!!

Birthdays ABOUND!!

It's a month of birthdays and I'm in the mood for baking cupcakes!!  I found the MOST delish recipe for both chocolate and vanilla cupcakes and I made a marbled cupcake.. adding food coloring into the white cake batter to get a lovely pink shade!! I took cupcakes to one of my student's who turned 5, some to the family of new students and some to the gym, of all places!! I had to get them out of the house, quick!  Otherwise, I would have kept eating them.. they were THAT good!!! See for yourself--- the pictures say it all!!

I did my first order of cupcakes for the wedding anniversary of my friend's in-laws. Vanilla cupcakes with vanilla frosting... with a hint of lemon in the frosting!
